Espresso

From Wikipedia, the free encyclopedia

Espresso has a layer of crema on top — the reddish-brown foam created when hot water is forced under pressure through finely-ground beans.

It is the base for many other drinks, including the caffè latte, cappuccino, and caffè macchiato.

Crema is the reddish-brown foam on top of an espresso shot — an emulsion of CO₂ and the coffee’s oils. A thick, even crema means the shot was pulled well.
